Lemon Green Beans with Toasted Almonds: Start by trimming and washing 1 pound of green beans. Toast 1/3 cup of raw almond slices in 1 tablespoon of olive oil until golden brown, then set them aside. In the same skillet, heat 2 tablespoons of olive oil and add the green beans, seasoning with salt and pepper. Cook for 5 to 10 minutes until they’re bright green and tender yet slightly crunchy. Squeeze fresh lemon juice (2 tablespoons) over the beans and cook for 30 seconds. Turn off the heat, toss in the toasted almonds, and serve immediately for a flavorful side dish.
