Fermented foods are the most natural source of probiotics – bacteria that are good for your gut. As one of the oldest ways to preserve food, fermenting involves a process called lactofermentation, where bacteria feed on starches and sugars in food and create lactic acid. This promotes good bacteria and beneficial B vitamins, vitamin K, enzymes, and short chain fatty acids that are great for our health when consumed. Some common food items that contain probiotics include yogurt, sauerkraut, kimchi, kombucha, milk and water kefir, certain cheeses, tempeh, and miso.
