Clean Eating Recipe: Mexican Street Corn

Experience a swift and delightful Mexican Street Corn in just 15 minutes! This recipe pays homage to Mexico’s vibrant street food culture with fresh corn, zesty lime, and fiery Tajín seasoning. Gather 3 cups of corn kernels, 2 tbsp butter, 1/4 cup feta, 1 lime, 1 tsp chili powder or Tajín, and salt. Remove kernels, melt butter in a skillet, and char corn for 5-7 mins. Squeeze lime juice and season with chili/Tajín and salt. Mix well and serve in cups, topped with feta. Optionally, sprinkle extra chili/Tajín for added flair. A taste of Mexico, ready in no time!
