Warm, creamy, and packed with nourishing flavors, this Chicken Curry Soup is both comforting and easy to make. In a large pot, melt ¼ cup coconut oil over medium heat, then sauté 1 chopped onion, 2 sliced celery stalks, 1 sliced carrot, salt, and pepper until softened, about 5 minutes. Stir in 1 cup cooked chicken and 1–3 tablespoons curry powder, cooking for another 2 minutes. Add 1 peeled, chopped apple, 4 cups chicken broth, and 1 can coconut milk, then bring to a gentle simmer.
